Daja’s July Menu Plans!

Wow, did this month sneak up on me or what?!  Isn’t it still the beginning of JUNE?!  🙂  Apparently not.

The good news is that it is time for Mommy to take another cooking vacation!  For one week this month we will eat from the freezer!  There’s lots to choose from in there now!  Conveniently,  this cooking vacation month falls when we are headed to the Reformation of Food and Family Conference in San Antonio!  So Daddy and the kids who will be on their own for the week will be able to eat nutritious home-cooked meals without me overseeing it!  (I know we have some Daddy readers who would not have any trouble whipping up a gourmet meal for the family if Mommy went away for a week.  But, my dear husband is not one of them.  We all have our gifts.  My husband can build anything, repair anything, anything I can dream up he can make a reality.  But, he doesn’t cook.  And that’s OK!)

You’ll notice the “x2” on various meals.  Those are the ones that will be doubled for the freezer, keeping it well stocked for the next cooking vacation in three months and ensuring that when the year is over we have 2 months worth of meals ready to go!

These stored meals have benefited more than just our family recently.  We had friends preparing to move and one day in particular they were so busy they didn’t know how dinner was going to get done!  What a cool thing to just reach into the freezer and pull out a nourishing pot of gumbo!  Another friend was feeling under the weather and didn’t feel up to cooking for her family.  We all need a day off now and then!  So, out came a meal.  It’s great to be able to PREPARED FOR LIFE’S HAPPENINGS!

    You asked me for vegetarian recipes one time. I did post one for you for Thai fresh rolls. Did you ever see it? It was in the comment section of the original post. Wasn’t sure where to put it so any one would see.

    I wish I’d been following your good example of doubling meals… a friend was just diagnosed with pancreatic cancer and instead of reaching into my freezer, I’ll be cooking extra for our family and theirs. And maybe try to get some into the freezer, too!
