Tomato Paste & Garlic Pasta

Back before Christmas we had the wind storm of the century here in La Crescenta, all through the LA Basin really.  It was scarey and there was a lot of damage.  Because of all the downed trees and power lines we were without power for two days.  A lot of people were without power for much longer.  Thankfully we had no immediate damage either others didn’t fair so well.

During our two days without power I had to get a little creative for meals.  Thankfully I had the ingredients to one of the easiest dinners right in my pantry.  6 Ingredients later we sat down to a hot meal by candle light.

Simple ingredients by candle light, make for a great dinner!

 

1 lb Pasta, any shape is fine
3 tbs Tomato Paste
4 Garlic Cloves, minced
¼ cup Extra Virgin Olive Oil
  Salt to taste
  Parmesan for garnish, optional

 

Bring a large pot of water to boil over medium-high heat; add 1 tbs salt to the boiling water then add pasta.  Cook according to the time recommended on the package.

Meanwhile, heat a medium-sized sauté pan over medium-high heat.  Add the olive oil and minced garlic.  Cook for 1-2 minutes (be careful not to let the garlic brown because it will get bitter); add tomato paste and salt to taste.  Turn off heat.

Drain the pasta when it is al dente, reserving 1 cup of the cooking water.  Toss the pasta with the tomato paste sauce adding the reserved water as needed to loosen the sauce to your desired consistency.

Garnish with shaved Parmesan.
